Job Summary:
Blue Macaw Catering is seeking a skilled and creative Banquet Chef (Catering) to join our team. The successful candidate will plan and prepare high-quality dishes for private events, corporate gatherings and special occasions while helping coordinate kitchen operations. We are looking for someone who is passionate about food, works well in a fast-paced environment and takes pride in creating memorable dining experiences.
Duties and Responsibilities:
Plan menus for catering orders, private events, weddings, banquets and special functions in consultation with clients and management.
Prepare and cook complete meals and specialty dishes for catering orders and events.
Develop new recipes and adapt menu items according to client preferences, dietary restrictions and event requirements.
Determine appropriate portions and presentation standards for catering orders and events.
Estimate food requirements and assist in calculating food and labour costs.
Plan production schedules and coordinate food-preparation and cooking activities to ensure catering orders are completed accurately and on time.
Instruct cooks and kitchen staff in preparation, cooking, garnishing and presentation techniques.
Supervise cooks and other kitchen staff during food preparation and event execution.
Ensure that all dishes meet company standards for taste, quality, presentation and consistency.
Requisition ingredients, food products and kitchen supplies and monitor inventory levels.
Create decorative food displays and oversee plating and presentation for catered events.
Coordinate the food-related equipment and supplies required at off-site event venues.
Consult with clients and event organizers regarding menu requirements and food service for weddings, banquets and special functions.
Ensure compliance with FOODSAFE practices, sanitation procedures and workplace health and safety requirements.
Assist with selecting kitchen equipment and arranging maintenance or repairs when required.
Prepare meals and specialty foods for special guests and catered functions.
Minimum Job Requirements:
Post-Secondary Diploma or equivalent, ideally in Culinary Arts or Restaurant Management
Food Safety Certificate
Minimum of 3 years experience in restaurant kitchen line
Ability to work in busy settings and events
Ability to work in various locations
Experience preparing dishes for guests with dietary restrictions, intolerances or allergies is an asset
